Standard taco toppings in Mérida: minced white onion with cilantro, creamy garlic sauce (red bottle), thin guacamole with cilantro (yellow bottle), habanero-based liquid fire, limes. I miss the minced cabbage you get up north, but love the garlic sauce!

I use all the toppings (heavy on the onions) and am trying to have more liquid fire every time I have tacos so that I get used to it as the sauce also happens to be very flavourful. I used to put drops on each one and now it’s a proper drizzle.

It’s wonderful and reminiscent of the garlic sauce you can put on donairs/shawarmas/gyros and such. It also helps neutralise the liquid fire a tiny bit!
